Our broth is built on beef and pork bones simmered with generous amounts of fresh lemongrass, shrimp paste and chili oil, producing a deeply complex, layered flavour that is at once spicy, salty, sweet and rich.
Thick, round rice noodles are the traditional choice — heartier than pho noodles, perfect for soaking up the bold broth. Topped with sliced beef shank and a slice of pork hock, finished with banana blossom, lime, herbs and bean sprouts. Bún Bò Huế has a devoted following among Vietnamese diners who want something with more punch than pho — and at our NE Calgary location it has become a regulars-only secret.
We use real lemongrass — bundled and pounded — never lemongrass paste. The shrimp paste is added carefully so the broth has depth without being overpowering. The result is the most authentic Bún Bò Huế in northeast Calgary.
