Goi Cuon (Gỏi Cuốn) — also known as Vietnamese summer rolls or fresh spring rolls — are everything Cha Gio is not: cool, soft, light and fresh. At TNK Vietnamese Restaurant our Goi Cuon are rolled to order in delicate rice paper, with poached shrimp, tender rice vermicelli, crisp lettuce, and a generous handful of fresh mint and chives.
They arrive at the table glistening, the pink shrimp visible through the soft wrapper — a beautiful, healthy starter. Pair them with our house hoisin-peanut dipping sauce, a warm, sweet, nutty sauce that complements the cool freshness of the roll perfectly. We roll our Goi Cuon fresh, never in advance, so the rice paper stays soft and the herbs stay vivid. Shrimp is poached gently to keep it tender and sweet.
